Keep your weight off with this yummy paneer mushroom and cashew stir fry!


If you are watching your weight replacing red meat with white button mushrooms can help you keep it off. Mushrooms are super low in calories. There are around 44 calories in each cup as compared to red meat which is four times the number of calories per volume. What’s more, vitamin D is present in good amounts in some varieties of mushrooms such as white button, wild edible and chanterelle. All you need to do is add mushrooms to foods rich in calcium to enhance the absorption of this mineral by the body. We got you a yummy mushroom recipe from chef Tarla Dalal, that will fill you up without showing up on your waistline. Preparing this sauteed mushroom is pretty easy. You will need:


  • ½ cup paneer (cottage cheese) cubes

  • I cup thickly sliced mushrooms

  • ½ cup broken cashew nuts (kaju)

  • 2 tbsp olive oil

  • 2 tsp garlic paste (lehsun)

  • 2 tsp ginger paste (adrak)

  • 2 tbsp finely chopped celery

  • ½ cup chopped spring onion whites

  • ½ cup red capsicum cubes

  • ½ cup yellow capsicum cubes

  • A pinch of fresh ground black pepper (kalimirch)

  • 1tsp chilli sauce

  • Salt to taste

  • 1 tbsp chopped spring onion greens for garnish

Method of preparation:


  • Heat the oil in a broad non-stick pan. Add the ginger paste, garlic paste, celery and cashew nuts and sauté on a medium flame for one minute.

  • Then add the spring onion whites, red capsicum, yellow capsicum, green capsicum, paneer, and mushrooms. Mix gently and sauté on a medium flame for 2 to 3 minutes.

  • Add the soya sauce, chilli sauce, pepper and salt. Mix well and sauté on a medium flame for 1-2 minutes.

  • Then serve immediately garnished with spring onion greens.
